Hokushika Tokubetsu Junmai Setchūchozō

Hokushika Tokubetsu Junmai Setchūchozō is made of domestic rice milled to 60%. Setchūchozō means "snow storage" and refers to the fact that sake is matured in tanks buried in snow.

Take three. Soft fruity aromas with hints of spice and gentle ginjōka. Smooth on the entry, with a medium body and velvety texture. The palate is gentle and rounded, showing a slight initial sweetness that gradually gives way to mild acidity and rich rice flavours. The finish is short, clean, and refreshing. Served chilled, the sake comes across as crisp and restrained, while at room temperature it reveals noticeably greater depth and character. A very classic and elegant sake overall.

We revisited Hokushika's Tokubetsu Junmai this year; here are a few additional remarks to last year's annotations: spicy nose with floral hints, spicy and dry flavour, with marked notes of banana, a refreshing acidity mid-palate, and a bitter finish. Very delicate and recommended!

This is a seasonal sake with rich and outstanding junmai taste and a soft aroma resembling that of ginjo. Komachi yeast gives it an aromatic flavour. Fruity nose of apples, and a taste of substantial fruitiness wrapped in a fine layer of refreshing acidity. The texture is almost creamy and viscous. Perfect.
