Fukumitsuya Kazeyo Mizuyo Hitoyo, brewed with the brewery's original yeast, has a very fresh flavour. It drinks well on its own and pairs well with almost any dish from different cuisines—great for sake beginners.

A moderate nose with hints of grain and dried fruit. The entry is gentle and smooth, with a light body and a silky texture. The initial impression is notably thin, almost as if slightly diluted. Fukumitsuya describes it as a "beginner's sake" that can also be used as a cocktail base. That might be true. Lovers of heartier brews might not get their fill of satisfaction, though. Good in taste and intention, but falls short of expectations. We decided to use it for cooking.
