Eikō Fuji Junmai Daiginjō Muroka Namagenshu Sake Mirai (栄光冨士 純米大吟醸 無濾過生原酒 酒未来) is a limited seasonal sake from Fuji Shuzō in Yamagata Prefecture. It is made entirely from Yamagata-grown Sake Mirai (酒未来), a sake rice developed by Takagi Shuzō, the producer of Jūyondai (十四代). The rice is polished to 50%.
The sake is bottled without filtration or pasteurisation and without adding water, preserving the fresh character of the newly brewed sake. It has an alcohol content of 16.8%, with the 2026 release listed at an SMV of -3 and acidity of 1.7. These figures can vary somewhat from year to year.
Japanese descriptions emphasise its fresh, generous fruit character and noticeable sweetness. The aroma is described as bright and fruity, while the flavour combines juicy fruit with a richer sweetness and a clean finish. Despite being relatively full-flavoured, it is intended to pair well with food rather than be enjoyed only on its own.
Sake Mirai is an important part of this release. The variety was developed over many years by Takagi Shuzō in Yamagata and remains closely associated with the prefecture's premium sake. Fuji Shuzō uses Yamagata-grown Sake Mirai for this expression, making it one of the more distinctive releases in the Eikō Fuji series.
