Could someone please tell me what 'josem' or 'chozen' is? It's what the host says before the countdown in this show (which is hilarious btw) and he sticks up his finger too. I hear it alot in different ways but always go to do with game shows since I love Japanese game shows. Anyway what does it mean, how can you use it and more importantly how do you spell it?! lol

actually i dont watch Japanese TV enough to know for sure, but he might also be saying 挑戦 ちょうせん meaning to challenge or attempt, without seeing it though, cannot tell you for sure.... but that seems the most probable to me.
 
yes, it's chousen, challenge.
 
'Chousen' is Korea
Kita Chousen is North Korea

Kita = North

Whilst South Korea is,

'Kankoku'

It can also mean to challenge as nice_gaijin stated
