夜 晩

I would like to know, when to use which one?
 
夜 can be used for all phase of night, whereas 晩 usually refers to evening or midnight at most(e.g. 昨晩遅く). Thus, unlike 夜, 晩 can't be used for before dawn.
 
It feels like the right time to explain 夕 as well, pleaaase is it ever used alone as 夕べ? Cause i've only seen it in combinations like 夕方 and 夕食

Another question. When, and I mean at what time/clock do you use the different phrases. From morgning, noon, evening and night?
I Denmark it is a bit lose, and then not. Especially around evening/night, and everything is based on when we eat :-S
Breakfast is around 6/8. The noon meal is at 9. Midday meal at 12. Coffee time is 3 o clock. Dinner is 6/7. Coffee time again at 9 in the evening.
So if someone says I will arrive at coffee time, all knows it at 3 o clock..
 
夕 refers only to evening. 晩 can be used for the later time than 夕, (e.g. before midnight).
夕 can be used alone(e.g. 秋の夕), sounds a bit classical, though.

Sunrise and sunset is the base in Japanese. It would depend on the person, but I'd say roughly 6~10: 朝, 11: 昼 or 昼前, 13/14: 昼 or 昼過ぎ, 17~19: 夕方, 19~23: 夜, 23~3: 深夜, 4~6: 明け方.
