I got married in Japan, and at the time, I was between jobs. My J wife was working only part-time, and it was no problem at all to get the spouse visa. My father-in-law had just retired, but was able to sign as guarantor. I realize that is not the same as your case, so what exactly CAN you both show other than a bank account? Was there steady work in the States? That would be something. How about upcoming work in Japan? If so, would you husband's employer be willing to provide a statement of some sort?
Contract work is WORK. Don't let anyone tell you otherwise. Contract work is widespread here. At the very least, be civil, not desperate, in your inquiries to immigration and show them your diligence in trying to provide everything they need, even if it amounts to substitutes.
