The city tourist association of Tsuyama in Okayama (former Tsuyama Domain) has started selling chocolate based on a recipe developed by an Edi-era scholar. Udagawa Yoan (1798-1846), a doctor and scholar of Western studies, concocted his recipe by borrowing from a 19th-century French household encyclopedia.
