Shizuoka Hiraki Tokubetsu Junmai

Shizuoka Hiraki Tokubetsu Junmai Honmarefuji is made of locally grown Honmarufuji rice milled to 60% and underground water from the Abe River that runs through Shizuoka City. It has a fruity aroma and a clean taste with a pleasant flavour.

Shizuoka Hiraki's Tokubetsu Junmai has a beautiful golden colour and a ripe fruit aroma. It has a deep and well-rounded flavour profile with intense apple notes. Our bottle, over a year old, showed signs of ageing with an earthy and slightly bitter character. Despite this, there's a good amount of underlying sweetness. It's relatively dry and smooth, likely due to the use of soft water from the Abegawa River. The finish is mild and medium-length, with a slight peppery tingle. We were pleasantly surprised by this sake and enjoyed it at room temperature.
