Tanrei Karakuchi Uonuma has a light taste and a good umami. It can be enjoyed chilled or warmed and is recommended to pair with grilled fish, grilled chicken, vegetable salad, and rolled egg.

Shirataki Shuzō was founded in 1855 by Minatoya Tōsuke (湊屋藤助). The brewery served travellers and peddlers in Yuzawa, a strategic hub on Mikuni Kaidō (三国街道) linking Echigo and Edo on the Nakasendō. Echigo-Yuzawa, the setting of Kawabata Yasunari's 'Snow Country', is located in the Uonuma region of Niigata Prefecture, an area with one of the world's heaviest snowfalls. Plenty of snow melts in spring and seeps into the ground, becoming limpid groundwater over fifty years. The water drawn from three wells on the brewery's property is soft water suitable for brewing and used to make the company's sake.

This is a classic Niigata tanrei, light and dry, with a smooth taste and just the right amount of umami. It complemented our sashimi perfectly.
