Kokonoe Saika Brewery in Kinokawa, Wakayama Prefecture, was founded in 1908 by Saika Toyokichi (雜賀豊吉). The brewery manufactures and sells vinegar, vinegar-based products, sake, liqueurs, miscellaneous alcohol, other brewed alcohol, soft drinks, and food products. Across Japan, Wakayama has the highest vinegar consumption per household in Japan. Kokonoe Saika was founded as a brewer of "red vinegar" in a prefecture known as the birthplace of sushi. The brewery has always focused on the vinegar culture of Wakayama and brews sake, which goes well with sushi, vinegared dishes, and other Japanese cuisine.

Golden hue, and a mild and fruity nose with a touch of sharpness. On the palate, it's rich and elegant with a medium body and a light, velvety texture. You'll find a creamy sweetness initially, followed by a refreshing acidity that gives way to a pronounced bitterness. The finish is long and sour. All the flavours are well-balanced, resulting in a rich, sharp, and elegant sake.
