Matsui Shuzōten was established in 1865, marking the start of its sake brewing business. In 1953, the company officially became Matsui Sake Brewery Co., Ltd., and 1996 Shōjukan — a combined office and exhibition hall — was completed. Anticipating the challenges of an ageing master brewer population and regional population decline, company president Matsui Noritaka dedicated himself to mastering the art of sake brewing. Now serving as both Kuramoto Tōji (brewery owner and master brewer), he oversees every step of the brewing process to ensure the sake's flavour remains consistent, unaffected by changes in leadership. On 21 November 2006, Matsui was recognized as the first Shimotsuke Tōji, a title he honours by tirelessly striving to brew exceptional sake that embodies the spirit of the Shimotsuke region.

A mellow aroma with notes of ripe fruit, herbs (like hay), and subtle spices. The sake offers a gentle fragrance and a refreshing taste, with the crispness of Miyamanishiki rice balanced by the smooth mouthfeel created from ultra-soft spring water sourced from the Hokugen Mountain foothills. This harmony of clean sharpness and bright acidity makes it a well-balanced sake that complements a variety of dishes. The finish brings a pleasant bitterness, followed by delicate hints of steamed rice, resulting in an understated yet elegant drink.
