We had been more than delighted by the Black Cow's Ginjo and looked forward to opening this bottle. It exhibits a pale golden hue and presents a powerful and pronounced bouquet dominated by sweet aromas reminiscent of ripe fruits. This suggests a brewing process that may have utilised hard water, contributing to the aroma's robust structure. Medium body with a velvety texture. A rich and elegant mouthfeel, showcasing a depth of flavour while maintaining a refreshing lightness. The finish is medium in length with a slight acidity, yet the lingering sweetness from the aroma remains pleasantly present.
