This is a very popular sake, a junmai daiginjo (fruity with hints of grapes, pears and nutmeg) brewed according to the Yamahai method, resulting in deeper flavour and complexity. Crisp, yet smooth and clean. The brewery recommends consuming it at room temperature; we had it chilled, and it was sublime with sashimi.
