We first tried this sake earlier this year, and our impression has changed very little. The aroma is sweet and lactic, with pronounced notes of kōji. It has a creamy, cloudy texture with a soft mouthfeel and gentle natural effervescence. Moderate sweetness is balanced by fresh acidity and a pronounced rice flavour. The finish is long and pleasant, and despite its richness, it remains surprisingly easy to drink.

Because this is a nigori sake, the rice lees naturally settle to the bottom. If you want an even texture and flavour, it helps to mix the bottle gently before opening. Rather than shaking it, which can build pressure and cause it to spill, the usual method is to slowly turn the bottle upside down a few times or roll it lightly to lift the lees. This will help maintain an even balance of sweetness, creaminess, and rice flavour. If you want a lighter first glass, you can pour without mixing and stir the rest later. It depends on whether you prefer an even profile or a gradual change.

The aroma is sweet, with clear lactic notes and a kōji character. The palate is creamy, cloudy, and thick, with a soft feel and very gentle carbonation. The sweetness is moderate, balanced by fresh acidity and a strong rice flavour. The finish is long with a slight sour note, and despite its thickness, it stays easy to drink.
