Fukumitsuya Fukumasamune Junmai Nigorizake Shiroki (福光屋 福正宗 純米にごり酒「しろき」) is a year-round, room-temperature-stable sparkling junmai nigori sake that was first released in 2009. This sake was developed as a rare nigori that can be distributed at room temperature and later received the Kanazawa Kagayaki Brand Grand Prize. Over the years, the brewery refined the brewing ratios, temperature control, and fermentation balance, maintaining the original body while adjusting the sweetness toward a cleaner, fresher profile.

The sake is brewed using only contract-grown Fukunohana sake rice and natural spring water known as "Hyakunen-sui" (百年水), which reaches the brewery after more than a century underground from Mount Hakusan. After bottling, a secondary fermentation is performed in the bottle to retain the natural carbonation. The result is a lightly sparkling junmai nigori with gentle rice sweetness, fresh acidity, and a clean finish, suitable for both aperitif and mealtime use throughout the year. The new, clear bottle shows the moderate carbonation and gives a simple, fresh impression.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period, when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquerware, and ceramics. The town, surrounded by the sea and mountains, also enjoyed a rich food culture. Today, it is known as a modern city with a history of traditional Japanese culture that is still appreciated. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience, being highly skilled yet short-tempered, qualities that made them popular among the Edo population. Kagatobi is made from high-quality sake rice and local groundwater, with a variety of tastes reminiscent of the Kaga firefighters.

We first tried this sake earlier this year, and our impression has changed very little. The aroma is sweet and lactic, with pronounced notes of kōji. It has a creamy, cloudy texture with a soft mouthfeel and gentle natural effervescence. Moderate sweetness is balanced by fresh acidity and a pronounced rice flavour. The finish is long and pleasant, and despite its richness, it remains surprisingly easy to drink.

Because this is a nigori sake, the rice lees naturally settle to the bottom. If you want an even texture and flavour, it helps to mix the bottle gently before opening. Rather than shaking it, which can build pressure and cause it to spill, the usual method is to slowly turn the bottle upside down a few times or roll it lightly to lift the lees. This will help maintain an even balance of sweetness, creaminess, and rice flavour. If you want a lighter first glass, you can pour without mixing and stir the rest later. It depends on whether you prefer an even profile or a gradual change.

The aroma is sweet, with clear lactic notes and a kōji character. The palate is creamy, cloudy, and thick, with a soft feel and very gentle carbonation. The sweetness is moderate, balanced by fresh acidity and a strong rice flavour. The finish is long with a slight sour note, and despite its thickness, it stays easy to drink.
