I cannot find Yukari where I live. I searched and determined yukari is some kind of salt I think. What is an acceptable substitute in a recipe?

What do you mean by yukari? Do you mean like in yukari gohan? But the yukari in this case, is not salt.
Can you show a link of what you're looking for?

Probably the OP refers to a rice seasoning Yukari, which is made of red shiso. Dried red shiso, salt and vinegar (or umeboshi if you can get) would be close to the taste of it.
