Recipe for Japanese omelette...tamago-yaki

Hello Japanese food-lovers!!! :)

I thought I might share with you a recipe of Japanese omelette (tamago-yaki);

You will need:
2 eggs
ツス table spoon of sugar
ツス table spoon of soy sauce
ツス table spoon of dashi
pinch of salt
vegetable oil for frying

*Break the eggs into a bowl and add sugar, soy sauce, dashi, salt and mix.
*Heat oil in frying pan over low heat and pour one quarter of the mixture into pan.
*When firm, flip over the edge and roll up, and store on one side of the pan.
*Add a second quarter of mixture, and again, just before egg begins to firm, roll around the completed roll and store on the other side of the pan.
*Repeat with the two remaining quarters, using the completed roll to make it bigger.
*RESULT: a big roll.
*Cool before cutting into 2,5 cm (1inch) lengths, and serve as side dish.

It seems that the 扇屋 restaurant (est. 1648) that was famous for tamago-yaki (in 王子 district, Tokyo) closed down last year. The brand name is still alive, their omelettes now available at a few places like department store basement booths.
