I'm a bit confused about the last part of the following passage. Does it mean something like - "The one should learn everything", "It is worth to learn everything".
Since he seen somebody dismembering an animal before and remembered that, and now this knowledge come in handy. So the speaker says that the one should learn evrything, because it might be useful any time.
Am I getting an idea right?

・・・・・・と、一連の作業をどうにか記憶の通りに再現できた。まさか自分が動物を解体することになるとは・・・・・・何でも、覚えておくものだ

Yes - that is the idea. One should learn how to do everything/anything.
It is destined to sound funny in English without throwing away most of the original Japanese. Maybe a more colloquial way to express would be, You never know when a skill is going to come in handy.
