I've been practicing my Kanji for some time now and 田んぼ came up some time ago. I didn't give it much thought, as I google imaged it and the meaning became pretty clear. But the other day I stumbled upon 畑 and 田畑, and seeing lots of rice paddies as I was riding on the train today got me thinking of what the difference could be. I get 畑 as the dictionary is pretty clear that it's a field used for agriculture in general, but 田畑 comes up in the dictionary as fields (of rice and other crops) So... what's the difference? Is 畑 just the one field and 田畑 more than one? And if 田んぼ is a rice paddy, and 田畑 is a field that can be used to grow rice, is 田畑 a more general meaning that includes 田んぼ in itself?

畑 doesn't include 田んぼ, and 田畑 literally means 田んぼ and/or 畑.
