Clarification regarding がする & がある

While practicing the other day, when wanting to say "This tastes of apple", I said to my friend:

このはリンゴの味がする。

He corrected me, saying I should say:

このはリンゴの味がある。

I'm fairly certain that I was correct in my original statement, but since he's studied longer and stayed in Japan, I was wondering if his way is better, or perhaps more polite?

You are correct and your friend is wrong. However, it must be こは, not このは, so you both are wrong, strictly speaking.;-)

I still mix up この/これ often. Is it correct to say that この needs a physical noun to accompany it, and that's why このは is incorrect?
For example, is it OK to say something like 「このチーズはガーリックの味がする」?

Yes.

Don't let the fact your friend has stayed in Japan buffalo you. Lots of people stay here and never learn squat or learn it poorly.
