chef in japan

hello everyone, i am a chef from scotland about to go and work in oz may 2003, passing 5 days in tokyo. My name is isaac (m) and i am 22. Does anyone have any advice for getting a job working as a chef in japan, doing japanese not french food, preferably not in a large hotel.

i am in tokyo may 14 til may 20th if anyone wants to hook up
