別にやる / のが目的の

Hello,

1)米自体は別にこうやって・・・指に隙間できないよう に気をつければ・・・
The girl is trying to wash some rice grains and now she wants to drain the water from the bowl she is washing the rice in.

Does 別にやる mean "separate". The adverb こう being between に and やる is a bit unexpected.

2) 古悪魔を捕らえるのが目的の駆け魂隊の中に、旧地獄の 信奉者がいるんです。

The translation given for this is "There are worshippers of old hell withing the squad whose very purpose is to capture the old demons". So 古悪魔を捕らえるのが目的 is a clause that defines 駆け魂隊. Is this grammatically correct? I'd expect it to be either 古悪魔を捕らえるのが目的である駆け魂隊 or 古悪魔を捕らえる目的の駆け魂隊.

別に modifies the omitted verb at the end of the sentence, for instance, 別に問題ない or 別にこぼれたりしない.

That's a quite common structure.
