That's actually the -masu stem 摘み + suffix たて.

I'm quite new to this company, so I don't really know (much about) how matters stand here.


You said you know the past form is 摘んだ. You must also know the -masu stem is 摘み, so it's reasonable to presume that it could be 摘み + たて, and then you can look up たて in the dictionary to confirm it.
 
Thanks. I did look up たて and there were quite a few たて and たつ, more than 10 altogether. It didn't occur to me it is a verb stem together with a suffix at the time.
