Yancha Shiramayumi Junmai Ginjō Hidahomare (白真弓 純米吟醸 ひだほまれ) is made from Hidahomare rice grown in Gifu. It has a gentle sweetness and richness paired with an elegant aroma that spreads softly in the mouth and sharpness that comes from the delicious flavour of the rice. It is perfect with lightly seasoned dishes that emphasise the flavour of the ingredients, Japanese cuisine such as sushi and mild cheese.

Kaba Shuzōjo, with its white-walled brewery set against the clear Seto River, was founded in Hida-Furukawa in 1704 when the first generation of brewers began their trade. The sake brewed here, with its suitable groundwater, rich rice harvests and bitterly cold winters, has been awarded every year, including the Gold Medal at the National Sake Competition and the Gifu Prefecture Governor's Award. The representative brand "Shiramayumi" is another word for "Hida". "Yancha" is derived from "Furukawa Yancha", referring to the resilient and warm-hearted nature of the Hida Furukawa people. While the brewery preserves the traditions nurtured over 300 years, Kaba Shuzōjo also takes on the challenge of creating new sake that expands the scope of Japanese sake.

It is one of the few sake breweries with a female president at the helm, Kaba Atsuko (蒲敦子), in the 13th​ generation.

Fruity nose with floral notes; sweet flavour with a good balance of tanginess and acidity. Well-rounded, with a spicy and alcoholic finish. We are growing fond of Hidahomare. :)

We had a second bottle of Yancha Shiramayumi; however, there's not much to add to our review other than that we grew fond of Hidahomare and its distinct features: bitterness and refreshing acidity with fruity notes.
