Yamamoto Honke, established in 1677, is located in Fushimi, Kyōto. The brewery uses Fushimi's famous Shirakikusui (白菊水) water, which springs near the main warehouse. Yamamoto Honke burned down in the Battle of Toba and Fushimi in 1868 but resumed its business soon after. As Fushimi is located inland, sake needed to be transported on the Go and Takase rivers, and it was not until the development of modern transportation that the area became the second-largest brewing region after Nada, a position it still holds today. From the beginning of the Taisho era, Yamamoto Honke began dealing directly with wholesalers in Tōkyō.
Yamamoto Honke is a member of the Fushimi Sake Brewers Association (伏見酒造組合) which nowadays consists of four local breweries.
