Urakasumi Junmai Daiginjō Yamadanishiki (浦霞 純米大吟醸 山田錦) is made of Yamadanishiki rice milled to 45%. It has a glamorous aroma of ripened fruit, with the umami and acidity of the rice in perfect harmony. This sake is exquisite and fruity. Its acidity is robust, and the finish is refreshing and sharp. Unlike a typical daiginjo, its subtle aroma allows it to pair nicely with various food. Best served chilled or at room temperature (5-20℃).

Saura Brewery is located in Shiogama City in Miyagi Prefecture. The first generation of the Saura family, Tomiemon Saura, initially operated a koji manufacturing business, but he began brewing sake in 1724. Later, the brewery provided sake to Shiogama Shrine, the oldest shrine in Oshu with a history of over 1000 years, which was revered by Date Masamune, Sendai's feudal lord and head of the Date clan. Since then, Urakasumi has been brewing this sacred sake called Omiki. Initially, sake was brewed under brand names such as "Yakumo," "Tomimasamune," and "Miyagiichi." The phrase "Urakasumi" was taken from an ancient poem by Minamoto no Sanetomo in the early 13th century describing the beauty of spring in Shiogama Bay. The brewery is now run by Saura Kōichi (佐浦弘一) in the 13th generation.

Brewery tours are available on weekdays but must be reserved one week in advance.

Urakasumi's Junmai Daiginjo is a complex sake made by blending two high-quality types of yeast. Clear, pale, lemon-green colour. Intense nose with hints of pineapple, melon, green apple, pear, lychee, apricot, and hints of orange, cinnamon, nutmeg and steamed rice. Slightly rich and dry, balanced acidity and umami, full-bodied, creamy texture.
