Tomiō Junmai Daiginjō Yamadanishiki 49 (富翁 純米大吟醸 山田錦49) is made of Yamadanishiki rice milled to 49%, Kyō no koto (京の琴) yeast and natural water from Fushimi, Kyōto. Over four weeks, the tōji selected the best time to squeeze the moromi. Tomiō Junmai Daiginjō is pasteurised only once (ひとつ火 hitotsubi) to retain its fresh flavour.

Kitagawa Honke Brewery was founded in 1657 by Funaya Shirobee (鮒屋四郎兵衛), who ran lodgings for river passengers on the Uji River near the Kangetsukyo Bridge. Funaya no Sake (鮒屋の酒) became a well-known brand and was exported to Osaka and Edo (modern-day Tōkyō). Kitagawa Honke produces a sake called Tomiō (富翁), a name taken from and inspired by the Chinese 'Four Books and Five Classics' (四書五經). The name signifies "those who are rich in spirit will enjoy a long, happy life." Since 1983, when the company first put Tomiō forward at the Annual Japan Sake Awards, their flagship sake has won 18 gold awards. In 1996, Kitagawa Honke opened a so-called "antenna shop" (アンテナショップ) named Okinaya (おきな屋), where they sell their rice and sake.

Overwhelming nose of fruits; strawberries, mikan, yuzu, and ripe banana present. Delicate balance of sweet fruitiness and acidity, with stimulating notes of mikan. Long, elegant finish with spicy, peppery hints. Best served at 8-12°C or 18-20°C and paired with glazed chicken, medium spicy dishes, and white meat.
