Tenpōichi Junmai Ginjō (天寶一純米吟醸) is made of 25% Yamadanishiki rice and 75% Nakasei Shinsenbon produced in Hiroshima and milled to 55%. It has a good balance of umami and sourness and a refreshing aftertaste.

Tenpōichi Sake Brewery, located in Kannabe, about ten kilometres north of Fukuyama, Hiroshima Prefecture, was founded in 1910. It is the last sake brewery remaining in Fukuyama. Tenpōichi uses "ancient water" (古代水) from 200 metres underground, flowing above two bedrocks, to brew its sake. The ultra-soft water and the soft acidity produced by careful squeezing give the sake a fresh sharpness and a pleasant aftertaste. It is a crisp dining sake and a perfect match for small fish from the Seto Inland Sea.
