Tengumai Junmai Yamahai (車多 山廃仕込純米酒) is made of Gohyakumangoku rice grown in Ishikawa and milled to 60%. It is a unique Junmai with a rich character and a harmonious balance between the rich aroma and acidity characteristic of the yamahai brewing process. The dark, golden colour is also pleasing to the eye. It is very versatile and can be enjoyed at a wide range of temperatures, from chilled to heated.

Shata Shuzō in Hakusan, Ishikawa Prefecture, was founded in 1823 by Shata Taiemon (車多太右衛門). Tengumai, the brewery's foremost brand, synonymous with the Yamahai style of sake brewing and the company's flagship product, has a distinctively rich, robust rice flavour. Naka Saburō (中三郎), Shata's president and one of the 'Four Heavenly Tōji of Noto', is responsible for the Tengumai and other brands produced at Shata Brewery. Shata uses subterranean water from Hakusan and premium sake rice grown in the Kaga Plain.

Deep golden appearance and an intense nose of narazuke and dried fruits. Medium-heavy body with a creamy, silky texture. Earthy attack, with a flavour of dried fruits and a delicate bitterness. Once the bitter taste fades, it gives room for a refreshing sour tingle. Spicy finish with exorbitant umami. Very complex and versatile, recommended to drink cold from 10°C to room temperature or heated.
