This is a truly excellent Honjozo. The variations of sake rice used in the production of this outstanding brew vary, and the brewery describes the varieties for each lot on their website. Our lot was produced on 11 November 2021 from Gohyakumangoku rice from Toyama and Yamadanishiki from Hyogo that was milled down to 59%. It has a typical junmai nose with notes of dried fruits, koji and rice. Very savoury and refreshing taste, spicy with a crisp finish but overall elegant and mild. Very palatable and recommended.
