Takijiman Junmai Daiginjō Crystal (瀧自慢 純米大吟醸 Crystal) is made of Yamadanishiki rice grown in Mie Prefecture and milled down to 45%. The soft water used for brewing makes it a gentle sake with a fruity aroma that spreads gently. However, as a Junmai Daiginjō, the elegant and smooth taste of the Yamadanishiki rice is distinct.

Takijiman Brewery is located in the mountainous part of Mie Prefecture, in the region of Iga, famous for its ninja history. Blessed with abundant nature, the brewery is near the valley of the Akame 48 Waterfalls, a national park selected as one of the 100 best waterfalls in Japan. Takijiman (瀧自慢), the "pride of the waterfalls", was founded in 1868 and incorporated under Asahi Sake Brewery Co., Ltd. in 1956. In 1992, the company was renamed Takijiman Sake Brewery Co., Ltd.

The Crystal is not listed on Takijiman's website. I found it listed as a "private brand". Had I tasted this one blindfolded, I would have never taken it for a junmai daiginjo: it has a very herbal nose, with hints of honey and soy sauce. Surprisingly, not fruity at all. Relatively dry for a junmai daiginjo, it didn't taste fruity; heavy and on the oily side, with a spicy finish culminating in a peppery aftertaste. Interesting.
