This honjozo (新酒) is a shinshu (新酒), a new sake produced in November or December that has not matured and therefore has a bold and wild character. The season lasts from November to February/March. Despite its sweet nose with mild overtones of apple and koji, its fresh and bold characteristics are overwhelming. It has an intensely rich herbal taste and a dry finish.
