Takahashi Koshino Kabutojō Daiginjō (高橋酒造 越乃兜城 大吟醸) has a gentle aroma and a mouthfeel reminiscent of the snowy Echigo Nagaoka. It is recommended to chill it to around 10°C to enjoy its richness and fragrance, but it is also delicious at room temperature. It goes well with oysters and sashimi.

Takahashi Shuzō in Nagaoka, Niigata Prefecture, was founded in the Ansei period (1854-1859) by Takahashi Shichinosuke, who used the subsoil water from the Suyoshi River running beside the brewery, and rice from the granary area around the brewery. The new brewery, with its characteristic hexagonal chimney, was constructed entirely of red bricks in 1922 but destroyed in the Nagaoka air raid in 1945. The Niigata Earthquake of 1964 and the Niigata Chuetsu Earthquake in 2004 caused major damage, including cracks in the outer walls and partial collapse, but the brewery withstood them admirably and was registered as a national 'Registered Tangible Cultural Property' in January 2007.

Takahashi Shuzō's sake is handcrafted by local brewers, led by the local Echigo Tōji, who put their heart and soul into their work, making the most of the high-quality local rice, abundant and good quality brewing water and the deep snow of the Echigo winter climate. Takahashi's sake is not too dry and not too spicy but has a full, gentle flavour without sticking to the 'tanrei' characteristic of Niigata sake.

I have received this (1,800ml) bottle twice as a birthday gift from my in-laws. It came as part of a five-bottle Niigata daiginjo set. Last year, we let this bottle mature in a dark place. After over a year, we opened it with great anticipation: Golden in appearance, it had a mild nose full of sweet fragrance and preserved a mellow and elegant character with minimal acidity, bitterness, and tender sweetness. Perhaps a little thin with a watery mouthfeel, this was still excellent food sake.
