Cowboy Yamahai (カウボーイヤマハイ) is a Japanese sake released as a symbol of the American Spirit, complementing meat with a tinge of acidity rare in conventional sake. At 18.5%, it has a relatively high alcohol level that cleanses the palate of meat fat. Yamahai also complements meat because of its soft refreshing taste that adjusts and balances well with steaks. It has a gorgeous, fruity fragrance. Yamahai can also be enjoyed with slices of lemon or lime. A dash of soda will enhance its subtle taste.

Shiokawa Shuzō, founded in 1912, is in Uchinomachi, west of Niigata City and home to Niigata University. Since ancient times, the underground water of the Shinano River has been abundant, and it is a land blessed with high-quality water. The brewery is made of old-fashioned clay walls, where the temperature between the four seasons remains constant, making it an environment suitable for sake brewing. The twenty-five brewing tanks are equipped with an automatic cooling device to thoroughly control the temperature of stored sake and fermentation control of mash. The brewing tank use sizes from 650 to 6500 litres, and the brewing scale is from 150 kilograms to 1.6 tonnes of white rice. The system allows fine temperature control for all products, from Daiginjō to regular sake. The primary taste is aimed at a light and crisp sake that enables you to feel the original taste of sake, even if it is dry numerically.

A nose of custard cream, vanilla, banana and lactic notes. Very refreshing attack, medium body with a fruity sweetness followed by crisp acidity and hints of bitterness. It loses much of its acidity at room temperature, where it adopts a different character: still rich and earthy yet milder, creamier and smoother. This complex sake can be paired with much more than meat: we can think of fish steaks and other hearty and savoury seafood dishes.
