Cowboy Yamahai Tender was created as sake to pair with meat dishes. While it has ample acidity and savouriness, the alcohol content has been held to 14.5%, making it easy-to-drink food sake. It was specifically crafted to be exported to Western countries where lower alcohol content is preferred. While the alcohol content is reduced, Cowboy Yamahai Tender still has a depth of flavour at 14.5%, the standard level for red wines. The gentle, refreshing savouriness of Yamahai balances well with the richness of a steak. Given its flowery, fruity aroma, dry, crispy taste, and lighter, gentler feel, this sake can be drunk by enjoyed by anyone.

Shiokawa Shuzō, founded in 1912, is in Uchinomachi, west of Niigata City and home to Niigata University. Since ancient times, the underground water of the Shinano River has been abundant, and it is a land blessed with high-quality water. The brewery is made of old-fashioned clay walls, where the temperature between the four seasons remains constant, making it an environment suitable for sake brewing. The twenty-five brewing tanks are equipped with an automatic cooling device to thoroughly control the temperature of stored sake and fermentation control of mash. The brewing tank use sizes from 650 to 6500 litres, and the brewing scale is from 150 kilograms to 1.6 tonnes of white rice. The system allows fine temperature control for all products, from Daiginjō to regular sake. The primary taste is aimed at a light and crisp sake that enables you to feel the original taste of sake, even if it is dry numerically.

The "Cowboy Yamahai" series is designed to be paired with meat dishes. The yamahai brewing method creates substantial acidity and results in a slightly higher alcohol content, balancing the fat content of meat. Cowboy Yamahai Tender has a reduced alcohol volume of around 14.5%, similar to red wine. We noticed an intense nose with notes of alcohol, dried fruits and narazuke. On first impression, it is mild, mellow, and silky, with a slight and tangy sweetness. It becomes more fragrant at room temperature—short and moderately bitter finish.

We did not pair it with meat but with fish, which worked well. The trend to create sake that is supposed to be paired with particular types of food produces curious sake varieties. Fukucho's "Seafood" comes to mind.
