Along Kōshū-kaidō Road in Suwa, Nagano Prefecture, there is an area where five sake breweries stand side by side, only 500 metres apart. The five breweries use the same underground water from the Kirigamine Mountains to brew sake, but each brews sake with its distinctive character and rich personality. The five breweries are known as the 'Five Suwa Breweries' (諏訪五蔵 Suwa gozō). Maihime, one of the five Suwa breweries, started brewing sake in Suwa in 1894 when it split up from Kamegen Jōzō (亀源醸造), a manufacturer of soy sauce and miso. It produced sake under the name Kameizumishuzō ten (亀泉酒造店) and changed its label from Sakura Kaede Masamune (桜楓正宗) to Maihime in 1912. In 2014, the company was relaunched as Maihime Co., Ltd. (株式会社舞姫). In 2015, Maihime opened a Tōkyō office in Hachiōji and started to produce its Takao no Tengu with rice grown in the area.

The Shinshu Maihime is almost colourless and has a clear, pale lemon-green appearance and a clean, medium-intense aroma with a nose of dried fruits and vanilla. It is medium sour and comes with nice umami, lovely sweetness and a creamy alcohol taste. Slightly tart and refreshing finish with citric notes. Exquisite!
