Ito's Shikishima Junmai Daiginjō Muroka Namagenshu (敷嶋 純米大吟醸 無濾過生原酒) is what the brewery calls a "high-specced" sake, made of Yamadanishiki rice milled to 40%. Just like its Tokubetsu Junmai, it is a muroka, an unfiltered sake. The elegant finish is both floral and powerful. It is recommended to serve chilled.

Itō Sake Brewery was founded in 1788 and produced its famous Shikishima brand for 212 years until 2000 when it closed its gates. In 2020, Itō Masaru, the ninth-generation scion, decided to revive the family business after his grandfather had passed away. To produce the first batch, Step 0, he leased the facilities of a brewery in Mie Prefecture and invented a recipe for a new type of Shikishima. This batch became Step 0.5. Itō Masaru reacquired a liquor manufacturing license in 2021 and was able to produce Step 001 in the brewery's original location in Kamezaki, Handa.

In November 2021, Itō Masaru started a crowdfunding campaign at Campfire in which 602 supporters raised 9,052,401 JPY which went towards the production of Step 001.

Shikishima Junmai Daiginjo Muroka Namagenshu is the second release since the reinauguration of Ito Brewery. We had the pleasure of participating in the crowdfunding for their first sake and were happy to see their Junmai Daiginjo Namagenshu (also part of "Step 001", the first batch produced in the refurbished sake brewery in Handa). This is a muroka, an unfiltered sake with a fruity nose with notes of alcohol and koji. It also boasts a faint scent of fresh wood from the koji room, a telltale sign of a new brewery. Mild on the palate, it has a pleasant, floral sweetness and nice effervescence. This is an unfiltered junmai daiginjo with a well-balanced aftertaste and a spicy finish. Very elegant; we cannot wait for Ito-san's next steps.
