Rihaku Junmai (李白 純米酒) is made of Kan-no-mai (神の舞), a rice variety grown in Shimane Prefecture. This junmai is milled to 68%. It has a good balance between spiciness and umami and is very refreshing to drink. The brewery recommends serving it chilled or at room temperature.

Rihaku Brewery was founded in 1882 by Tanaka Takejirō (田中竹次郎) in the castle town of Matsue in Shimane Prefecture, a place rich in water and greenery. The brewery was named after the famous Chinese poet of the Tang Dynasty, Li Bai (李白, Rihaku in Japanese). Many of his poems celebrated the pleasures of friendship, the depth of nature, solitude, and the joys of drinking wine. One of his most famous poems is "Waking from Drunkenness on a Spring Day". Li Bai wrote other poems praising wine, representing the feelings of those who love wine. Wakatsuki Reijirō (若槻礼次郎), a native of Matsue, who twice became Prime Minister in his lifetime, was also a lover of sake, as was Li Bai. In 1928, the sake Li Bai was named after him by Wakatsuki Reijirō. The character for Li Bai on the label is a copy of his calligraphy. In 1950, the company was incorporated as Tanaka Shuzō Co. (田中酒造有限会社). In 1993, Tanaka Shuzō changed its name to Rihaku Shuzō.
