Nestled along the Akigawa River, a branch of the Tama River, lies the town of Itsukaichi. Here, the clear air and the pure river flow create a scenic beauty that changes with the seasons. Many people are drawn to this place, which is affectionately called the "inner parlour of Tokyo". On the edge of this town, where the road to the village of Hinohara starts, there is a peaceful mountain hamlet called the old Togura. This is where "Kishō", a fine sake brand, was born. Kishō is made in the best environment possible, with fresh air from the Akigawa Valley and a cooler temperature than the 23 wards of Tokyo by 4-5 degrees. The water used for sake brewing is also of the highest quality. Underground water comes from Shiroyama, a mountain in front of the brewery. This water has been cherished and preserved by the people of Togura for generations. It is slightly soft and has very low levels of iron and manganese that can ruin the taste of sake. This water is the perfect match for sake brewing. It is the "treasure" of Kishō.

The brewery does not offer tours or degustation but sells its products in a small shop on the premises.

This sake has a fruity aroma with hints of herbs. It has a golden colour, a light texture, and a crisp mouthfeel. It balances a refreshing acidity with a touch of sweetness and finishes with a spicy kick of pepper. While crisp and sour when chilled, it got a lot deeper, richer and more elegant around room temperature. We recommend chilling it, but do not consume it too cold.
