Niki Sake Brewery, located in Hida-Takayama, Gifu Prefecture, was founded in 1695. This was when the Hida region came under the direct control of the Tokugawa shogunate, which ordered the abandonment of Takayama Castle. Today, the brewery is in the hands of the 16th generation. The limpid well water in the centre of the house was used for brewing sake, and the sake name 'Tamanoi' is named after it.

Sake Mekka Hida-Takayama is almost in the centre of the Japanese archipelago and surrounded by the 3,000-metre tall Hida Mountains. The temperature varies day and night; winters are harsh and snowy, and the mountains are lush and green in spring. The rich natural environment and climate conditions are indispensable for producing delicious sake. The region is also fed by clear water from the Hida Mountains. The area is also home to Hidahomare, Gifu Prefecture's representative sake rice, and has all three conditions - climate, water and rice. Takayama's local sake has been nurtured in the traditions and culture of the Takayama Festival in spring and autumn. Each brewery has developed its characteristics and continues to brew a unique taste of Takayama with a love of the local area.

Herbal and highly aromatic, with an intense nose of alcohol and hints of dried fruit. Dry as they come, it has a good balance of acidity, sweetness and umami. Slightly sour on the palate, it boasts a clean and bitter finish and a peppery aftertaste. It turned significantly milder and sweeter on the second day. Very palatable.
