Nakano Kunizakari Junmai Doburoku (國盛 純米どぶろく) is made from 100% contract-grown rice and is bottled as-is without filtering. Best served cold.

Doburoku means "home-brewed sake". Bootlegging was outlawed in the Meiji period. Nowadays, doburoku refers to sake with a lower volume of alcohol and a brewing process in which all the main ingredients – steamed rice, kōji, and water – are added to the starter mash at once, not in batches, as is the case with regular sake. The yeast in the mash does not multiply as much as it would in typical batch brewing, resulting in an abundance of sugar that cannot be converted to alcohol. The sugar erases the yeast remnants and halts the fermentation process. Therefore, doburoku is much sweeter than even nigorizake.

Nakano Sake Brewery is located in Handa, Aichi Prefecture. It was founded in 1844, formally established as Marunaka Sake Brewing Co. in 1909, and incorporated as Marunaka Shuzō Co. (丸中酒造) in 1965. In 1990, it changed its name to Nakano Sake Brewery Co., Ltd. It is known for its Kunizakari sake brand. In addition to sake, the company also produces and sells shochu, plum wine, liqueurs and amazake. Nakano Sake Brewery also runs the Kunizakari Sake Culture Museum (國盛酒の文化館 Kunizakari sake no bunkakan) in a former brewery building.

We have already had the pleasure to degust Endo's range of domuroku (yes, it's called doMuroku) and were looking forward to trying more doburoku. Nakano Shuzo's is a different sort of 'bootleg' altogether: it has a nose of lemon, yuzu and yoghurt. It's rich, creamy, and sweet but with refreshing citric notes. Higher acidity than usual doburoku and very little effervescence. Very refreshing. The dregs are thick and creamy, like okayu or nutmeg. Heavenly.
