A dry Junmai with a silky smooth taste. Kuromatsu Hakushika Yamada Nishiki Dry Junmai Silk (黒松白鹿 山田錦 辛口 純米 シルク) has a delicate flavour and a smooth finish, making the most of the lusciousness of Yamada Nishiki. The rice is polished to 65% to give a silky, fine and smooth mouthfeel. The dry sake expresses Hakushika's commitment to using Miyamizu water and 100% Yamada Nishiki, high-quality rice produced in Hyōgo. The sake is characterised by a luscious taste that spreads on the palate and a crispness that recedes elegantly.

It is best enjoyed with meat, fatty fish and other dishes that make the most of its delicious ingredients.

The brewery was founded in 1662 by Tatsuma Kichizaemon (辰屋吉左衛門) and produced under the label 'Hakushika'. 'Kuromatsu Hakushika' is its best-known line of products.

The Tatsuma family has owned the company (辰馬家) for generations. Along with the Kano family (嘉納財閥 Kano Zaibatsu) and the Yamamura family (山邑財閥 Yamamura Zaibatsu), the Tatsuma rank among the most prestigious sake brewers of Nada. After the war, the zaibatsu was dismantled, and the family focused on their brewery.

The brewery's Kuromatsu Hakushika Rokkounen Junmai Daiginjō V-1000 (超特撰黒松白鹿六光年純米大吟醸 V-1000) is astronomical, with a list price of over 100,000 JPY, the highest price tag attached to any sake on the market.

The name Hakushika (白鹿) is based on an old Chinese legend. Emperor Hsuan-Tsung (r. 712-756), known as the longest-reigning emperor during the culture-rich Tang Dynasty, found a white deer wandering in his palace gardens one day. Seeing that this rare and beautiful animal was adorned with a bronze medal indicating that the animal was 1000 years old, the emperor recognised this as an auspicious sign symbolising a long and prosperous life. The Japanese traditionally adopted the Chinese deer legend and regarded it as a sign of longevity. Tatsuuma-Honke chose Hakushika, a label representing its long history.

Tatsuuma-Honke Brewing Co. Ltd. is affiliated with Midori-kai (みどり会) and is part of the Sanwa Group (三和グループ).

Delicious nose of resins and dried fruits, mild and refreshing, dry with well-balanced acidity, slightly spicy. We started to drink it chilled, but it got even better at room temperature. As recommended by the brewery, we also tried it as kanzake, heating it to 40-45 degrees where it tasted best. Heated, it had a spicy tingle that gently spread in your mouth and lasted to the finish.

This was the second time we bought the Silk "in error"; alas, an error it was not. Not much to add to the last review. This is an excellent Junmai. We had it with a large serving of sashimi on a late Saturday afternoon and finished the bottle in one session. :) 🍶
