Kuheiji Sauvage 2022 Junmai Daiginjō (醸し人九平次 雄町 SAUVAGE 純米大吟醸) is 100% made of Ōmachi rice. It is an emblematic cuvee honouring that rice variety. The Sauvage is worked according to the same principles as Eau du Désir using a higher-temperature fermentation allowing primary aroma extraction. The Ōmachi reveals all its power and ample and fatty profile in these conditions. The aromas of mushrooms derived from the powerful kōji give way to undergrowth and ripe fruit at the end. With less tension than Yamadanishiki, it surprises with its volume, which invades each area of the palate—a gorgeous sake which discreetly uses the codes of Junmai Daiginjō.

Banjō Jōzō is located in the Midori Ward of Nagoya, Aichi Prefecture. The brewery was founded in 1789 by the ninth-generation head of the Kuno family, who took the name 'Kuheiji' (九平治). Banjō Jōzō was established in 1960.

Currently, the brewery is run by the 15th generation Kuno Kuheiji (久野九平治) and Sato Akihiro (佐藤彰洋), the tōji (master brewer). The leading brand name, 'Kamoshibito Kuheiji'' (醸し人九平次), is popular in Japan and abroad. Around 2006, the company started selling Kuheiji in France. The Junmai Daiginjō, Betsuatsura (別誂), made from Yamadanishiki, is served in a Michelin-certified three-star restaurant in Paris.

Banjō Shuzō has been using Yamadanishiki rice from Kadoyanagi, Kurodashō-chō, Nishiwaki, Hyōgo Prefecture, for a long time. Since 2010, employees have been working on rice cultivation; since 2014, the brewery has owned the farmland. Kuno Kuheiji stated that he intends to apply the concepts of "terroir" and "domaine" to sake and open a brewery next to his rice fields in Hyōgo. The "Domaine Kurodashō" line of products is expected to be released in winter 2022.

The Banjō Jōzō building, the former rice polishing workshop, the bottling facility, several warehouses, the white rice warehouse, the detached building, the storehouse, the inner and the outer well, the former brewery and barrel repair shop are all registered tangible cultural properties. In 2016, Banjō Jōzō began producing wine under the Domaine Kuhage in Morey-Saint-Denis, Burgundy, France.

Kuheiji's exquisite Sauvage is made of native Ōmachi rice grown in the brewery's own paddies. Producing wine in their vineyards in Burgundy, Kuheiji has created sake profiles resembling those of French white wines: both the Eau du Désir and the Sauvage are examples of Junmai Daiginjō with distinct, clear profiles marked by the characteristics of their rice varieties. The Ōmachi, lime-coloured in appearance, has a fruity punch of green apples and pears, carrying citric as well as herbal notes. Fresh, mild, sweet and full-bodied, it has a refreshing citric aroma with mineral notes. Crisp finish full of refreshing acidity. Slightly effervescent.
