Kubota Brewery (not to be confused with Asahi Shuzo's Kubota label from Niigata) is located in the backwater of Sagamihara, in a valley that couldn't be more picturesque. The Junmai Daiginjō is the top-level product in their regular sake lineup, outshone only by the Kimoto Junmai Daiginjō and several types of sake aged for up to ten years. The Sagaminada Junmai Daiginjō comes with a magnificent sweet scent and mild, refined flavour. It is very smooth, with no edges and corners. Nice umami and a gentle finish. A very elegant and solemn type of daiginjō.
