Kizakura Junmai Ginjō (黄桜 純米吟醸 花きざくら) has a gorgeous aroma and is made with kizakura (cherry blossom) flower yeast. 'Kizakura' is a double-petalled cherry tree with large flowers and 10-15 petals that bloom from mid-April to early May. Hundreds of flowers were collected two to three days after full bloom to harvest the yeast fungus. Kizakura Junmai Ginjō, created from the Kizakura flower yeast, has a refreshing sweetness and a gentle taste with a slightly lower alcohol content of 12%.

The company name derives from the founders' fondness for yellow cherry blossoms (a cherry tree with pale greenish-white flowers). The company's mascot is a kappa drawn by cartoonist Shimizu Kon (since 1974, after Shimizu's death, cartoonist Kojima Isao has been in charge of the design). Until 2006, the company's name was Kizakura Shuzō, the following year; it was changed to the current name without the 'Shuzo' to broaden the scope of expansion beyond sake.
The Kizakura breweries are at the Fushimi head office in Kyōto and Tamba, Hyōgo. A small brewery was attached to the directly managed restaurant opened at the Mediage in Daiba, Minato, Tōkyō, but closed along with the restaurant in September 2009. The sparkling sake produced by the Tamba Brewery with black beans won a Bronze medal at the International Beer Competition 2013.
