Kidoizumi Tokubetsu Junmai Muroka Namagenshu (木戸泉 特別純米 無濾過生原酒 PURE GREEN 2023BY) is an unfiltered, unpasteurised sake made of organic Yamadanishiki rice from Sosa, Chiba Prefecture.

The Kidoizumi PURE series is produced by having contract farmers grow rice suitable for sake brewing so that the individuality of the rice used can be enjoyed. Kidoizumi uses 100% organically grown Yamadanishiki from Sogo Sato, a producer who runs an organic rice farm in Sosa, Chiba Prefecture, the home town of Kidoizumi Brewery.

It is unfiltered raw sake brewed with Kidoizumi's unique, special technique called Kōon Yamahaimoto (高温山廃酛). No yeast or lactic acid bacteria are added, as the natural lactic acid bacteria are used in the Yamahai process. Although it is a Junmai, it has an alcohol content of 16%, and while it has the strength typical of Kidoizumi, it can be matched with a wide range of food.

Kidoizumi Shuzō was founded in Izumi, Chiba Prefecture, in 1879. The brand name is "Kidoizumi," which is based on "Kido" (木戸) and "Izumi" (泉). In 1956, the third-generation toji developed his own high-temperature Yamahai brewing method based on his intense desire for 'good sake' (旨き良き酒). Since then, Kidoizumi continued working on natural brewing for over sixty years. 荘司勇人五代目就任。In 2016, the 5th generation tōji, Sōji Hayato (荘司勇人), took over the helm.

Kidoizumi Tokubetsu Junmai Muroka Namagenshu presents a visually appealing clear lemon hue with a clean and moderately intense nose that hints at a sweet bouquet of chocolate, custard, and dried fruits. It strikes an off-dry note on the palate with high acidity and medium levels of umami and alcohol, all wrapped in a relatively light body. The medium intensity of flavour reveals strong green undertones, pronounced acidity, and citric notes, culminating in a bitter aftertaste. Its smooth texture and short finish leave a lingering bitterness and an almost grassy aftertaste. While mild and slightly sour upon first taste, it offers a refreshing aroma and robust flavour. It has a crisp acidity that achieves an exquisite balance, particularly suited for pairing with meals. This special pure rice unfiltered, unprocessed sake maintains a delicate equilibrium, ensuring the flavour is neither too dominant nor too subdued.

Sadly, as great as the bottle's basic characteristics were, my personal experience was mixed. Assuming that the bottle hadn't been stored well, I was led to the conclusion that our particular bottle was faulty. The grassy tatami undertones were not to my liking, leading me to a tentative three-star rating with plans for a future re-evaluation.
