Kaetsu Homare Kirin Tokubetsu Junmai (麒麟 ほまれ麒麟 特別純米) is made from Gohuyakumangoku rice milled to 55% and blended with yamahai junmai sake, adding to the umami and richness of the sake. It has a rich, mellow rice flavour and is delicious cold. However, the brewery recommends enjoying it lukewarm. The sweetness of the rice is brought out in this sake, making it a brilliant food pairing.

Kaetsu Brewery is located in Tsugawa, Agamachi, Niigata, a town on the Ban'etsu West Line, connecting Niitsu in Niigata Prefecture with Aizuwakamatsu and Koriyama in Fukushima Prefecture. The brewery was founded in 1880 in Fukushima and then transferred to Niigata in 1886. Niigata Prefecture is famous for its exquisite food rice named Koshihikari. Aga-machi lies at the confluence of the Agano and the Tokonami rivers and is surrounded by many mountains. This climate births the highest class of sakamai (sake rice). Moreover, water quality is also essential in sake brewing. Kaetsu Sake Brewery has an excellent natural spring with pure and soft water. The name, Kirin, derives from a legendary chimerical creature in Chinese mythology.

Kirin Homare has a nose of dried fruits (figs and apricots). The first impression is a little thin, but it boasts a pleasant aroma of nuts, dried fruits and hints of narazuke. Tangy with slight acidity, medium dry. Clean finish with a peppery tingle.
