Although the Koshi no Kanbai is regular sake (futsushu), it uses rice polished to 58%, just like ginjo sake. It has a flagrant nose with notes of resins and turpentine. Brisk, tart, dry, slightly sweet and spicy: it is very palatable and a classic with a fanbase beyond Niigata's borders.
