Ishikawa Tamajiman Junmai Genshu Hiraoyoshi (多満自慢 ひやおろし) is brewed during the winter months and slowly ages in the brewery, creating a harmonious and mellow flavour. Around September, the sake is ready for consumption. It has a deep-matured aroma and is sold only in September and October as a seasonal sake of limited production. The fragrance of Tamajiman Hiraoyoshi spreads when it is warmed from room temperature to lukewarm. Foil-steamed mushrooms, boiled aubergines, and other autumn dishes are a perfect pairing.

Ishikawa Brewery is located in Fussa, in western Tokyo, near the banks of the Tama River. It was founded in 1863 and moved its production to Kumagawa, Fussa, in 1881. Ishikawa prides itself on the delicate texture and sharpness of its sake. The brewery is a tourist attraction in Fussa, with a museum, two 400-year-old zelkova trees and a white-walled storehouse of historical value. In addition to sake, the brewery also has a brewery restaurant, Fussa Beer Hut, where visitors can enjoy Tama no Megumi microbrewery, which resumed production in early summer 1998 for the first time in 111 years, as well as Zogura Omusubi, where you can taste sake and microbrewery beer.

Ishikawa Brewery offers guided tours in Japanese and English.

Hiyaoroshi is the first sake of the year, pasteurised once in early spring and stored and aged during summer. Around September, it is ready for consumption without second pasteurisation. Typically, it has a deep-matured aroma and is sold only in September and October as a seasonal sake of limited production. Tamajiman Hiyaoroshi is brewed in Fussa near the Tama River. It has a nose of dried fruits and alcohol and boasts a deep, earthy taste, warm sweetness, and a wide range of other aromas. Medium dry with a slight sour tingle of lactic acid. Very well-balanced, a harbinger of autumn and its seasonal fruits.
