Ippongi Denshin Ine Junmai (一本義 伝心 稲米) is made of Koshinoshizuku rice milled to 65%. A first impression of banana is followed by fragrant biscuit and a lingering note of apricot. This sake has a exceptionally smooth mouthfeel, soft and supple like the abundant ears of rice swayed by the fall breeze, and mild acidity that results in a crisp finish. Named Ine ("rice field"), it is made solely from Koshinoshizuku, the rare rice grown only in Okuechizen. Ippongi recommends Denshin Ine with Japanese-style omelette or steamed custard, mushroom omelette, or other soft egg dishes.

Ippongi Kubo Honten was founded in 1902 by Nikichi-sensei, the fifth-generation owner hailing from the Kubo family. The frigid land of Katsuyama, with its abundance of clean water and beautiful rice fields, is the ideal environment for sake brewing. The essence of Fukui's sake - dry sake with a good crisp finish - was highly evaluated in the early Showa era. Ippongi has become one of the largest sake brewers in Fukui Prefecture.
